GLUTEN FREE/VEGETARIAN RECIPE Chocolate Mousse

Serves: 4 people
Ingredients
1 ⅔ cups heavy cream
2 tsp vanilla extract
½ tsp. Kosher salt, table salt or sea salt
4 egg whites
½ cup sugar
5-6 oz. bittersweet chocolate
Chocolate shavings to garnish
Materials
2 Large Bowls
Whisk
Serving cups
Instructions
First, take one large bowl and beat the cream, vanilla and salt with a whisk until lightly firm. Chill this bowl in the fridge.
Second, in the second large bowl, beat egg whites until light peaks form. While whisking, gradually add the sugar until dissolved.
Third, add melted chocolate to egg whites and fold until it is halfway distributed. Then, add whipped cream and continue folding until evenly distributed.
Finally, divide into serving cups and chill. When ready to serve, sprinkle with chocolate shavings.
For the record, my Aunt uses this recipe almost every Christmas and it has never failed once. Happy Holidays everyone!
